Scottish Shortbread

Today I made Scottish Shortbread for St. Patrick's day. They are practically the same, right? Scotland and Ireland? Anyway, if you like shortbread but hate fussing with the mold, here is an easier recipe. Warning though, these cookies are not sweet. I have drizzled and dipped with colored chocolate to sweeten it up a bit.


SCOTTISH SHORTBREAD

1 c. Butter, softened
3/4 c. Powdered Sugar
1 1/2 c. Flour
1 c. Cornstarch

Cream together the butter and powdered sugar. Add the flour then corn starch. Roll out dough 1/4 inch thick on a dusted flat surface. Cut into desired shapes. Bake at 300 for 25-30 minutes.

Option: my mother pokes the top of the cutout dough with a fork. I've also pressed the sides with a fork to add a little decoration.
