I reserve Tuesday for The Sorcerer's Scone so I'm a day ahead. Hope that's ok. But I tried a new recipe and it's now Special K's favorite!
6 whole eggs
2 c. egg substitute (Egg Beaters)
salt and pepper to taste
12 foil muffin tins
Sky's the Limit!
You could add any veggie... spinach, peppers, onions, broccoli, asparagus, etc.
Add your favorite meat too... bacon, ham, turkey, sausage, etc.
2 tbs. grated cheese
Preheat oven to 350 degrees. Mix the egg and egg substitute together, add salt and pepper to your liking. Set aside. Add foil tins to the muffin pan. This will make for easy clean-up later. Spray each tin with non-stick cooking spray. Fill each tin with your favorite filling, add the cheese then pour in the egg mixture. Fill to the top of the foil muffin tin. Bake for 20 minutes.
The egg will puff up but will go back down once cooled. Remove the foil and store in the refrigerator. Re-heat in the microwave! Makes 12 muffin quiche.
The quiche shown is turkey lunch meat, chopped and bacon.
