Fresh Strawberry Scone Recipe

FRESH STRAWBERRY SCONES
WW Points: 4


Recipe:

2 cups flour
1/4 cup sugar
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt
1/2 cup light soy milk
1/4 cup egg substitute
2 tbs. low-calorie margarine, melted
1 cup fresh, diced strawberries

Mix together all the dry ingredients (flour, sugar, baking soda, cream of tartar, salt). Add the milk, egg and butter to the dry ingredients all at once. Mix until combined. Fold in strawberries. Drop 6 equal mounds of batter on a prepared cookie sheet about 1 inch apart. Bake at 400°F for 12-15 minutes.



Variations:
You could divide the batter into 12 equal parts making each scone 2 points.
You can also use fat-free milk instead of the soy. The soy is 0 points, fat-free milk is 1 point. Spread across the recipe does not affect the point value much but I personally like to save where ever I can, no matter how small.

Yum!I wonder what it would taste like if I used Almond "milk" instead of the soy (since I cant have soy).........you always are so creative!!!! ysm

You could also substitute 1 cup of flour for 1 cup of oats for more fiber/ less calories!
