Peanut Butter Bliss!

Almost expired peanut butter = An excuse to make Peanut Butter Pie!

I had never used this recipe before and since half my teeth fell out while I ate it, I'd make some modifications. Soooo, I'm giving you two different recipes, the original and the modified even though the modified has not been tested. This is NOT a Weight Watcher friendly pie, doubt I needed to tell you that though.



ORIGINAL Peanut Butter Pie

1 cup smooth peanut butter
8 oz. cream cheese, softened
1/2 c. sugar
12 oz. cool whip (that's the biggie size btw)
1 pre-made chocolate crust
1 jar hot fudge ice cream topping

Mix together peanut butter, cream cheese and sugar with a mixer. Mix in 3 cups of cool whip until combined. Spoon mixture into pie crust.

Reserve 2 tbs. of hot fudge and set aside for garnishing. Microwave remaining hot fudge for 1 min. Stir and spread over top of pie. Refrigerate until set. Spread remaining cool whip over hot fudge layer being careful not to mix the two.

Place remaining hot fudge in a small ziploc bag. Cut off a small corner of the bag and drizzle topping over pie.

Refrigerate until ready to serve.

In my opinion: there was waaaaay too much peanut butter mixture and the hot fudge was just too rich. So here's an idea:



MODIFIED Peanut Butter Pie

1/2 cup smooth peanut butter plus 2 tbs. separated for garnishing
4 oz. cream cheese, softened
1/4 c. sugar
12 oz. cool whip (that's the biggie size btw)
1 pre-made chocolate crust
1 box of chocolate instant pudding prepared

Mix together peanut butter, cream cheese and sugar with a mixer. Mix in 3 cups of cool whip until combined. Spoon mixture into pie crust.

Pour the chocolate pudding over the peanut butter mixture and spread evenly. Spread remaining cool whip over pudding layer being careful not to mix the two.

Place 2 tbs. peanut butter in a small ziploc bag. Cut off a small corner of the bag and drizzle topping over pie.

Refrigerate until ready to serve.
